Ellipsis is a dry white wine made from Moscato grapes.
The grapes are harvested by hand, immediately pressed and sent to a slow fermentation at a low temperature which lasts about 40 days.
The wine has been obtained with the revolutionary Vinooxygen ™ (www.vinooxygen.it) method, patented by the Elegir family, which allows to carry out all the vinification without the need to decant the wine.
This system allows an absolute control of the oxygen level in wines, eliminating the aromatic quality losses, due to unwanted oxidation and allowing a reduction of sulphites up to 70% of the legal limit,
without compromising its shelf life over time.
The method also provides for reducing the use of water and detergents in the winemaking process by up to 80%.
Alcohol content: 13.5% vol.
Serving temperature: 8-10 ° C.
Pairings: wine suitable for aperitifs, fish dishes, appetizers and simple first courses, but it is also a wine for all meals.
